it might be that plastic is relatively permeable to certain stainy things and you could make sure to eat those stainy things out of ceramic instead or something
also surface damage, scratches, general decay - plastics aren’t that stable (could just replace often)
my first thought was utensil scratching but i unconfidently believe there are backpacking plastic dishes that are pretty immune to scratching and also fully immune to dishwasher warping/cracking, I will ask my chemist/engineer roommate tomorrow, he would know for sure
