my understanding is that I still need to host my planet somewhere on a unix machine with the urbit vm running on that. if I dont wan a keep a laptop running in a closet i need to use something like aws for example. idk the security implications exactly of this.

I know that urbit does e2e encryption for communications between people in the network by default but that's all I know

I don't know that they have any provers implemented yet, but that's a big upside to a well-defined deterministic design.
