You might also see failed market experiments as artifacts that feed new experiments: supplying them with info re: absence of demand. Doesn't have the feel of exactly what you're asking after, though, does it? Are you thinking of absence supplied @ consumer lvl?

a lot of products seem to exist to induce thirst: snacks, alcoholic drinks (which also quench thirst), exercise, strong tasting foods

Sizzle, as opposed to steak. The metaphor applies to anything which is marketed on the grounds of status, prowess, or comfort.

Much has been made, of late, of the alleged addition of "virtue" to that mix. I would argue that it's nothing new, except perhaps a shift in domain into the more overtly political.
