Does anyone understand the point of “hiking boots” and can you explain it to me?

Easy: You want a hard sole so you can walk across nasty ass rocks. You want them to keep your ankles in line with your foot so as not to break them. You want them to be mostly waterproof so ya don't get wet. And you want them to have really good profile so ya don't start slippin.

I can hardly speculate about your situation, you may have adapted over time, which not everyone can do. Being able to bring to bear full force without ground under all parts of your foot seems like a huge advantage as well.
