Indian food discourse always ends up revealing how much of the diaspora’s sense of self has been shaped by consumerism. It’s telling that we always get so sensitive about the most market-friendly, consumable parts of our identity. It’s why I still hear “chai tea” griping in 2021.

Dominant American culture seems to only have room for one blinkered notion about Indian food at a time. It used to be/in some quarters still is, "All Indian food is curry". Now it's, "Curry is not an Indian thing". And it pops up all over the place--there is literally no escape.

India has always been a messy and chaotic and cruel country for many but it always felt like it was living breathing full of energy and contained the promise of a better future but now when I think about the country I see it as dead, hollow, and soulless
