In the book "Thinking, Fast and Slow", Daniel Kahneman explains very clearly the difference between conscious thinking, that allows us to do exams, and the intuitive thinking that allows us to actually acquire and speak a language.

The book doesn't specifically talk about languages. Somebody needs to do it though!
