general advice: - visit your local farmers market and make friends! there’s not much produce right now but in a few months you can get way better stuff than supermarket crap - find chefs you like and trust and follow them/their restaurants on insta

- sometimes it’s worth paying up for quality ingredients (e.g. hodo tofu) but sometimes it doesn’t matter (e.g. canned chickpeas). use your judgment - learn a little food science, what acids and bases and salt and sugar and heat do in different circumstances
