strings in high-level languages are the last vestige of people clinging to raw access to memory
Agree in principle, and my code tends to take typed structures past what many consider sane, but I’m struggling to conceptualise a string free language… What should I look at for inspiration?

erlang -- it (sorta) has strings but uses them much less than other dynamically-typed languages

I remember a truly unicode-aware text representation library for early 2000 Common Lisp. It was a nightmare to use for anything but fully locale-aware text processing. "You want to get the second character!? What even is a character?" Maybe that's the solution ;)
