Curious- why is it wrong to target Facebook ads by age, but not wrong to target TV or print ads by audience demographic?

Do you think the old “No Irish Need Apply” signs were wrong? If you do, how would you reconcile that feeling with the reality that nobody would need to have a sign like that in the first place today because targeting allows them to bypass it while having a similar effect?
