Most of the office buildings South of Market are too wide for easy conversion into housing; however, most of the older ones north of Market are about right.

100 Van Ness was an office building converted to residential with a floor plate that is roughly 150x100. It can be done. You just usually end up with deep studio/1-bedroom units that might include an interior room that serves as an office. It's not for everyone, but that's ok.
