Sourdough bread-too demanding to make
Sourdough starter is like having a kid or pet. It always needs to be fed.
So needy & stressful. Is it mainly people without kids making it during the pandemic?
It is overcomplicated bread.

Once you’re on a schedule, it’s manageable. You can also get a proofer if you want more predictability.

I don’t have a proofer. I’m just willfully imprecise and I usually just shape it once it’s doubled whenever that is. Usually I start bulk fermentation at breakfast or right before I go to bed.https://www.theperfectloaf.com/the-importance-of-dough-temperature-in-baking/ …

If I start bulk fermentation at breakfast or before bed, it means I either bake at dinner that day or at breakfast the following morning.
