A million. But basics—farro salads, the toasted farro preparation. Also pickled greens (garlic, oil, vinegar golden raisins if you have them) over toast. If you can get your hands on ricotta (our kids mainline it so we have it) whipped ricotta under the greens. Lamb meatballs.

If you have rennet you can just make your own ricotta. Lemon and citric acid work too but rennet made ricotta has better texture
