I want expensive cocktails, but I don’t want booze in them. Unfortunately the non-all ingredients seem to be labor intensive right now. So need someone to make boozey flavored filler?

Correct. The good news, though, is that more restaurants and bars are innovating with creative non-alcoholic cocktails, pushing that genre way into the mainstream, and well beyond sugary mocktails or fancy juices. See

As housing becomes more expensive, there's a real opportunity to outsource and consolidate "living rooms" as public spaces. I don't know what the business model looks like, but the need is there.
