Can anyone explain the practice at restaurants of asking you your drink order as you sit down, often before you even see the drink menu? What's the point of a drink menu if people aren't given time to look at it?

Then why not advertise all of the drinks?

You want customers to ask “which high-margin drink do I want?” not “do I want a high-margin drink or a low-margin drink?” Also maybe a bit of avoiding paradox of choice
