@khanacademy How can I see a list of what assignments a student has completed? I need to look at ONE specific student, NOT click through every single assignment. Is this possible?

That might work - Can I do this for ALL assignments I have assigned to a particular class in one export?
If you go to the “Settings” tab for any given class, there should be an option to download all data as a .CSV file. Hope that works for you!
