one of the two (2) times I’ve cried at work since joining NYT was when I got in big trouble for talking to an exec on background. since then, I have offered to walk out of interviews rather than default to background, and... a lot of people say “ok fine” and go on record.

depends on the context but I'll tell flacks something like "sure we can speak on background, but if you want your viewpoint reflected in the story you must go on the record." It can be edifying to compare what they'll say on background to what they're willing to say on the record
