    Last year I made a naturalistic chocolate Yule log (bûche de Noël) with coconut moss and meringue mushrooms. This year I added more diverse fungi, forest soil crumbles, ferns cut from edible wafer paper, and a mocha buttercream filling.

    If we had spent the past 9 months on Shackleton’s Endurance expedition instead of this Covid adventure we would just be reaching the point where the ship sinks and they camp on an ice floe. They made it home, but it took another while. Spread optimism & patience for the holidays.
