Alternative theory is that carnivore is a very intense version of a ketogenic diet which does have relatively well studied inflammation benefits. So it works just by being an extremely restrictive keto diet
Also in many cases can allow the gut to recolonize and heal as there are no fiber/carb inputs for existing flora to feed on. Literally have a friend who reversed early arthritis with a year of carnivore. Crazy
