Life’s too short to roll your own. Got a Synology 7 years ago, never looked back. DS1812+, but will upgrade within the next year or so.

I eventually gave up on hand-rolling a FreeBSD-based NAS box, bought one from Synology, and have been pretty happy with it since.

I have a DS916+ and am pretty happy with it's Plex support, though it chokes a bit on exotic formats. Whatever you go for, make sure it's an Intel CPU and that Plex has hardware transcoding support for it.

If you want to build your own, Unraid OS is a paid option that boots off USB. Handles NAS/RAID functions, plus VMs and Docker for just about anything you can think of (including Plex!). This runs everything in my house.
