Sometimes writing for television has different pressures than writing for fiction. So, I'm convince that the showrunners began with every intention of following GRRM's story but then, well, errbody loved Jon Snow.
Let's be honest and I think I'll be right when sometime in the far future the last book is published: Jon Snow was supposed to get his head chopped off by Danerys. It would fulfill his character arc perfectly. He would die just as his spiritual true father died
Showrunner 1: Jon Snow is too popular to kill off. So what are we two intrepid tv writers do? We'll have him kill Danerys! It's perfect. Because she's a tyrant and all the guilt and fucked-up-ness of their incest. Showrunner 2: Done
Showrunner 1: Ummm. Oopsies. Then that means we're gonna have two incestuous women-killing murders at the end. Because Jaime is prophesized to kill Cersei SR 2: Everyone thinks that will be Tyrion SR 1: Still. We can't have 2 dudes killing their aunt or sister/lovers
SR 2: So, we give Jon Snow the Jaime ending and then we give Jaime... SR 1: I don't know. A sword fight and then dying in Cersei's arms. Who cares. Everybody will be stunned by the Hound's finale
SR 2: But Arya is supposed to kill Cersei! SR 1: Yeah, but we fucked up and had her kill the Night King. We can't have her killing everyone. SR 2: Why did we have her kill the Night King again? SR 1: Fuck if I know but it sounded cool in the writer's room
And so on and so forth. Once you start shuffling endings around because of fan favorites, the center cannot hold, etc
It still stings how bad both 7 and 8 are, but 8 was insultingly stupid.
