RAID 1 only support one disk failure. As long as you put /boot on raid-1, you should be able to boot and rebuild array. During installation you need to create at least 3 RAID1 partitions: /boot - 1G (ext4) /boot/efi (EFI bootloader) - 512M (vfat) / - Rest of your disk size ext4)
