I still hate that. But that's at least based on an actual sword design. How would you shift your hand grip in the double saber shown in the "closed" configuration?
The way I think of it is you don’t. Grasp the folded saber only by the “upper” half, Saber folds out, bottom hand grasps after it folds out

So you're suggesting that you never use it in the closed position. Hope the user doesn't lose their hand (or life) while trying to activate and get open :)

You could still wield it closed. After some practice I bet you could do some cool moves where you use the fold-out as part of a flourishing attack or something
