Has anyone sold an nft redeemable for something that isn’t available yet? Also curious to hear from on why he suggested the stablecoin rather than an nft

The token is fungible (not NFT) if there are more than 1 indistinguishable units of it. "Stablecoin" doesn't sound right either. Crowdfunding token?

I've been thinking about crowdfunding a beer by selling beercoins that you can exchange for the beer when it's ready. You could easily do it on Stellar. You don't even need payment processing, you could just sell the tokens on Stellar's DEX.

This might be problematic for legal reasons (at least in the US) but would be an interesting experiment.
I believe it's a bearer bond / security which LLCs are allowed to issue in Finland. Am I right ?

Under certain conditions, yes. There are EU-wide restrictions to this.
