So, I'm not allowed to go out for a jog or hike? Where is the data supporting this level of isolation? Surely, I don't need to make a fake run to the supermarket just to get some fresh air?

No, that's not what is being said. The opposite actually. You should get some fresh air, just avoid heavy populated areas and those who are most vulnerable. Practicing social distancing is key.

Where do you see that? The only statement I've seen says some whitelisted activities are OK but everything else is not OK.

I think jogging and hiking are fine. They have been. Stay At Home means "as opposed to going to an office or anywhere else you feel like."
Outside exercise that doesn't involve contact with a lot of other people is fine, as far as I know.

China was also welding doors shut and trapping people inside...many died while trapped...but yeah let’s follow their lead

You can go outside for a walk or hike or run, you just need to maintain a 6 foot distance from people who don’t live in your home.
We’ve been on shelter in place here in the Bay Area, been hiking and for a walk around the neighborhood. Saw kids out riding bikes. This is all okay
