Does anyone know of a project management tool that can give a visualization of the whole org as a network graph with groupings for departments/teams, zoom levels for epics/projects/tasks/subtasks? I'm tired of working in 1d space, drilling up and down. Need lateral movement.

This may be a stretch, but, you could use ManyChat Flow Builder and approach your project like a "chat bot." From demonstrations of this tool, there are probably many more applications outside of "chat" like project management.
