Maybe also include a resolver such as Knot, Unbound or PowerDNS precursor. Hosting your own secure DNS resolver, but still forwarding everything to Google doesn’t make much sense from a privacy perspective.

You're totally right. Right now the image allows to chose the resolver (as your -u parameter). I thought that the usefulness for such an image would be if a (possibly large) group uses the same DOH resolver.

Maybe make the resolver optional? But even if a large group shares the same DoH proxy, a local cache will help you save bandwidth/reduce latency.
