It would be cool to set up a video camera for a day at the main gate and use some Python image libraries to get an accurate wait time per each person. I would be more curious about the standard deviation for wait times.

Definitely! There are other ways they could do it: Use the Disney park app with Bluetooth beacons in lines, or GPS, maybe NFC.
