Would any political / social scientists be interested in a massive data dump of all politicians on a local, state and federal level that give biographies, voting history, etc. for every politician from current times back to the 1700's?
Something like Propublica but more detailed?

Yes, but how would this even be possible? I assume you couldn’t capture literally every politician, especially those at a local level
