The vegan movement has a problem with some of our people being against medicine. As a scientist and former medical researcher it’s very awkward for me. I hate it. Never figured out what I can do aside from arguing with them, and I dont have the energy for internet arguing anyway.

First: I think it's great that you are interested. Most people are not of that ethical caliber. Second: you have the right idea about making the transition. People who try to do it all at once almost always fail. That's where the "I was vegan for 2 weeks" jokes come from.

I didnt become vegan in a day. I didnt even become vegan in a year. I became vegetarian in a day. Then over the course of 2 years I started cutting things out one by one until I was there. I don't have any book recs because I didn't read any books about it. I just cooked and ate.
