there was a recent article about how Mongolians are all lactose intolerant but eat/drink tons of dairy anyway

Yeah, part of it may be that they ferment the dairy and it makes it more digestible. It's also possible there are some other mutations that provide steppe people etc with lactose tolerance through a distinct mechanism that has not been identified yet
