Dems aren't particular worried the "checking" will show fraud; they're worried Republicans will find a legal or extralegal way to overturn/reverse the election because they don't like the results.
Is that at all plausible, though? Trump has plenty of appointees on the federal bench but he doesn't own the courts.

I don't think it's plausible, and red states that went Biden sending Trump electors is only marginally more plausible, but it is not somehow irrational or suspicious for them to be alarmed Trump is trying.
