many of those people are also maxing out 401k, espp, etc so have way less cash on hand than one would assume

isn't the coffee expensive half the time because the rent is high, in no small part b/c of demand from well capitalized technology companies, who are paying these salaries? Like the coffee (well, not that pour over single origin, but Starbucks) would be $3 in Idaho?
