the accepted spectrum is "i'm going out on dates" (0-2) -> "i'm seeing someone" (3-5) -> "i'm dating someone" (5-N) -> "someone is my partner/bf/gf/SO", [N = dates to "the talk"] ergo "we went on some dates" -> "we're seeing each other" -> "we're dating" -> we are a couple
