Though to be fair, India has so many different sub-cuisines that maybe some family in some random village has been making something that way for 10 centuries and the rest of the nation has no idea because they speak some language shared by 10k people in a nation of 1 billion.
i wish i knew more abt different regional cuisines! i feel like i have a reasonable sense of north vs south general trends but not enough about finer grained differences and idk the indian restaurants here all that well
Mm, its honestly super hard to keep track as well. But Ugadi is about as Hyderabad as it gets if you're ever in Sunnyvale.
I feel super odd sharing that too, since it was actually one of my white friends that took me to the only restaurant that has anything close to my grandma's cooking. But in my defense, I usually just cook instead of serially trying a bunch of whitewashed places.
