i have infinite respect for whoever was in charge of marketing indian and japanese food to white ppl and just forced them to learn words like vindaloo and onigiri meanwhile chinese restaurants are still letting guys named drew call literally anything and everything a dumpling

Indian-wise, we mostly changed the food instead of the words. Just about nothing about chicken tikka masala or lamb vindaloo is actually something any Indian person would cook.

additionally, after living in america for 10-12 years it's truly a marvel to me that japanese and indian cuisine somehow maintain their food with "premium/fancy" branding (also $25+ for a meal), unlike chinese food which is so ubiquitously branded as "cheap junk/drunk food"

...my hypothesis is that indian food's standard is maintained just because the british wanted it to be so. and americans are weeby af so anything japanese is exquisite

I grew up in Alabama and had no way to get vindaloo or onigiri until I left for college. If Drew hadn’t named them dumplings, dumplings wouldn’t have been there either. 1-18 year old me is eternally grateful to Drew!
