Well, because I now regularly say the word ‘baby” (due to working on the Boss Baby team), all of my targeted ads are officially pregnancy and child related

It's the Facebook Ads Pixel. It's a bit of code that sits on a shocking majority of sites on the internet, and it counts the number of times you've visited certain pages and done certain things on those pages.

You can definitely turn off audio capture on all of those apps, but it’s annoyingly to do over and over again because it inhibits use of features like “Instagram stories” (ie you can’t use it at all unless it’s turned on)

Are you sure audio is being captured and used for that purpose? The mic would have to be on literally all the time, and the technological infrastructure required to make that volume of unstructured data useful would probably not be worth the time and money to build.

All I have is my own anecdotal evidence. ¯\_(ツ)_/¯ There’s always been mixed public reporting as to whether or not they listen. Whether targeted ads are coming from data collection or audio collection, I find either creepy, especially around sensitive subjects like pregnancy.

Oh for sure. I'm not saying it's not creepy or that that's how it should be, ESPECIALLY with sensitive subjects. There are lots of people in the industry (myself included) who are deeply against this kind of targeting and personalization and are constantly fighting against it.

The reason I question the audio thing is because the general public is often misinformed about how this sort of thing works, and it distracts them from more practical ways of protecting their privacy. https://joindeleteme.com/help/kb/10-online-privacy-tips/ … is a great resource

Advertisers may be tracking us with audio, but they're more likely to rely on simple yet effective methods; audio's a lot of effort for a small gain. Rather than worry about being listened to, you should protect yourself with things like adblockers and password managers.
