Quantum mechanics says that minds influence the world by just observing it. Could it be that mind, consciousness, belief are a fundamental part of the universal fabric?

thats not how quantum physics works at all "observation" is a thing random atoms do, it is done whenever any two things interact it has to do with probability amplitudes and interference effects and nothing to do with consciousness

complicated math reasons i dont understand particularly well but theres also the many worlds interpretation: we do, in fact, see all outcomes, but not in the same branch of reality

Right, and there’s branches of the many worlds in which I suddenly explode or water turns to wine or an elephant appears in my living room. Wouldn’t that be magical if it happened?

those do not, in fact, happen, because they are physically impossible some highly-improbable events do happen, but dont expect to see anything below 10^-10 probability on a per-second basis to happen in your lifetime the events you listed are easily <10^-1000
