I think the most pernicious ingredients in the indian diet are copious amounts of fake oils (canola, safflower, sunflower).

While I cook almost exclusively in ghee, its the carbs more than that IMHO. Carbs are cheaper than protein so people feel they are getting more bang for their buck

Yeah it's hard to disentangle complex causes. It's just my own hunch that the oils make the problem much worse thru inflammation. They are best avoided completely (unless have to eat at restaurants). Also, not all carbs are equal. Sweet potatoes appear to be fine.

I don't agree with a no carbs approach. I love potatoes and sweet potatoes. The problem is that we will combine potatoes WITH rice or some other carb. Note that westerners combine potatoes with meat
