Okay, I watched #unity3d roadmap talk, building a better Unity talk and still don't get where stuff gets shipped. @andytouch I need help!

What do you mean by "where"?
it sounds like there are multiple beta tracks, experimental builds, etc. Is there a single guide so see what ships where?

Rule of thumb: use Unity released about a year ago for max stability.
