Three-cornered leeks. They can be used as a substitute for chives, their flowers sprinkled on salads. In fact, the whole plant is audible (that was meant to be 'edible' of course but my spellchecker changed it & I like it!). Listen to the earth!

Wild garlic is out v early this year... Excellent for pesto or as an alt to bulb garlic - easy to id as it smells of, er, garlic. Can be stored in oil if chopped, as pesto or frozen :) Great if you're storing food for (un)expected events

Clover can be eaten raw in a salad or cooked or even dried to make tea. Apparently they taste better boiled. The leaves are high in vitamins and proteins and have quite an acquired taste.
