I like the idea of heuristics like this, but there are things I might tell a doctor, a lawyer, or a priest (ok, well in theory) that I might not tell a spouse or a close friend.

Probably because the collector feels less intimate and further away. A spouse would result in more immediate consequences compared to a tech-giants from which consequences feel distant or are not felt at all.

Interesting. I've used the "next door neighbor" test -- I trust them, to a degree. They have a spare key to my house. But wouldn't want them to read my e-mails / know my whereabouts 24-7 / etc. Let alone stuff like sleep/eat/exercise times....
