A tad more baking powder than what you think...and if you can give your dough an extra hour or two at the rest, just a little yeast. Light, and a bit more chewy. (Also if you have family members with a cholesterol problem, fry it in peanut oil, it still tastes good!)

How do you leaven your bannock? Baking powder works best if it's fresh. Stale rising agents don't work well. The fix for density is to let it rise. Cover it, and let it rest. Add more baking powder if it doesn't rise enough.
