Focusing on averages seems wrong. No reason an average adult can't get up to 90WPM touchtyping with some focused practice, and that's reasonable to expect if optimizing a lifelong practice. (Steno may not be.) Speech transcription is also error-riddled, reducing effective WPM.
I'd say thinking is the limiting factor when writing something interesting, not typing speed
If you had to blow into a tube like a tetraplegic every time you wanted to write the slightest thing you thought, I think you'd write a lot less.
