Honestly, my best advice is not to keep incriminating stuff on a device at all if you can help it, and to use Veracrypt to secure anything sensitive. Operate assuming cops will find a way in, especially when it comes to communications with others.
There's no real knowing where back doors exist, and it's worth remembering that agencies like NSA are under no obligation to tell you what they've accessed. Again, it's best practice to assume they can get in.
That said, what can be legally used to prosecute you is a different story. It matters who the judge is, but it's harder (not impossible, but harder) for prosecutors to use what they do find against you in court if they used illegitimate means to find it.
Some kinds of access are easier to compel than others. Your face is not incriminating speech. Your fingerprint is not incriminating speech. A password... well, that's speech, technically. The fifth amendment comes into play.

Also, PS, in a lot of these situations, it's worth setting up these barriers even if cops can get in eventually. It can be the difference between cops using your phone as a live tap into a protest signal group chat and your comrades realizing the chat is compromised in time.
