The available tools to automatically generate OpenAPI documentation from network traffic are surprisingly thin and crappy.
This is such a monotonous boring ass task and yet programmers haven't really tooled it yet, which is very surprising.

useoptic.com has a tool for this but it might be buried... Paging
is the other one and I think they maybe highlight this tool more in their docs but I'm on the go ATM
