Easy enchilada recipe for the Twitter public:
1) Mix McCormick's enchilada sauce with tomato sauce
2) Boil chicken and shred it
3) Warm up 6" tortillas by cooking in oil (I use olive oil)
4) Wrap chicken in torts, cover in sauce and shredded cheddar cheese

Alternative lazy approach:
Microwave any kind of cheese into a tortilla and cover with sauce mix. Bachelor tested and approved.
