why is waffle house such a beloved American establishment?

Crazy broad hours and willingness to be open in crazy contexts means everybody has unique memories tied to it imo. When hurricanes hit Florida when I was a kid, Waffle House would be the only thing open. The relief we felt to have AC and a hot meal bought intense loyalty in me.
