Because it's insanely fast, has all-day battery, and doesn't need a fan.
The technical answer is the system-on-a-chip design, which brings massive benefits in speed, energy consumption, and heat generation

How would it compare to something like a desktop tower with an intel 7, 32 gb, and a 930 ssd nvmi?

Probably benchmark websites somewhere that compare them though, idk
i think the aggregate synthetic benchmarks rank them somewhere in the middle of prev gen ryzen 5 + i5
but if you just isolated, like, rendering and compile, they'd prob look more impressive.
