I love cultures that put meat in stuff unnecessarily. The Japanese do this a lot, lots of their vegetable dishes have fish involved for no reason.

Yeah in the dashi. Dashi is used in egg dishes too, like tomagoyaki or chawanmushi.
I wouldn’t say it’s unnecessary, though—without the dashi those dishes would fall flat

Unnecessary wasn’t the right word, but there’s something very out-of-left field about ordering a dish simply labeled “green peppers” and it comes with dried shredded fish on it. Like, you didn’t need to do that to serve me green peppers lol

I’m a big fan of all the classic dishes that use fish sauce in Thai, Vietnamese, and Korean cooking too: pad thai, tom yum soup, som tum (spicy papaya salad), pho, com suon nuong (grilled pork chop with broken rice and egg), and kimchi, just to name a few
