I love cultures that put meat in stuff unnecessarily. The Japanese do this a lot, lots of their vegetable dishes have fish involved for no reason.

I love sushi like a madman but I just ate peppers with katsuobushi on it and sister that did not add much to the experience. But I like it.

As an avid cook I have to object and say this is not unnecessary! They both add an umami flavour that kimchi just isn't the same without. Like Cesar salad dressing... anchovies are in it, but you don't taste the fish, just an inexplicably delicious depth of savoriness.
